Description

This Walking Taco Casserole is a fun and delicious twist on the classic fair favorite. Packed with seasoned ground beef, melty cheese, and crunchy corn chips, it’s layered like a casserole but tastes just like a walking taco! Perfect for weeknight dinners, potlucks, or game day gatherings.


Ingredients

For the Casserole:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning

  • 1/2 cup water

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

  • 2 cups shredded cheddar or Mexican blend cheese

  • 4 cups corn chips (Fritos or similar)

For Toppings (Optional):

  • Sour cream

  • Diced tomatoes

  • Shredded lettuce

  • Sliced olives

  • Jalapeños

  • Fresh cilantro


Instructions

1 Prepare the Beef Mixture
Preheat oven to 350°F (175°C)
In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft
Add minced garlic and cook for 1 minute more
Stir in taco seasoning and water, then simmer for 2-3 minutes
Add black beans and Rotel, stirring to combine, and cook for another 2-3 minutes

2 Assemble the Casserole
In a 9×13-inch baking dish, spread half of the corn chips on the bottom
Top with the beef mixture, then sprinkle shredded cheese evenly over the top
Bake uncovered for 15-20 minutes, or until cheese is melted and bubbly

3 Add Toppings and Serve
Remove from oven and let cool slightly
Top with remaining corn chips and your favorite taco toppings like sour cream, lettuce, tomatoes, and jalapeños
Serve warm

 

Notes

For a spicier version, use hot Rotel and add sliced jalapeños to the beef mixture

Substitute ground turkey or chicken for a leaner option

Leftovers can be stored in the refrigerator for up to 3 days
