Ingredients

Instructions
1 Prepare the Tortilla Crust
Preheat oven to 375°F (190°C)
Lightly grease a 9-inch pie dish or baking dish with olive oil or butter
Arrange tortillas to cover the bottom and sides of the dish, overlapping to form a crust
Press down gently so they hold their shape
2 Make the Egg Filling
In a mixing bowl, whisk together eggs, milk, salt, and pepper
Stir in shredded cheese, cooked meat (if using), bell peppers, onions, and spinach
3 Assemble and Bake
Pour the egg mixture into the prepared tortilla crust
Sprinkle additional cheese on top if desired
