This Sweet Hawaiian Crockpot Chicken is an easy, flavorful dish featuring tender chicken slow-cooked in a sweet and tangy pineapple sauce. Perfect for busy weeknights, this dish pairs well with rice or vegetables for a complete meal.
Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
1 can (20 oz) pineapple chunks, drained
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1/2 tsp ground ginger
1/2 tsp black pepper
1 tbsp cornstarch (optional, for thickening)
2 tbsp water (optional, for thickening)
Cooked rice, for serving
Green onions and sesame seeds, for garnish (optional)
Instructions
1 Prepare the Ingredients Place the chicken in the crockpot and add pineapple juice, brown sugar, soy sauce, pineapple chunks, bell peppers, garlic, ginger, and black pepper Stir to combine and coat the chicken
2 Cook the Chicken Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreddable
3 Thicken the Sauce (Optional) If a thicker sauce is desired, mix cornstarch with water in a small bowl and stir it into the crockpot Cook on high for an additional 15 minutes until the sauce thickens
4 Serve Serve the chicken over cooked rice and garnish with green onions and sesame seeds if desired
Notes
Use chicken thighs for extra juiciness and flavor
For a spicier kick, add red pepper flakes or sriracha
