Description

For the Cake:

1 box strawberry cake mix (plus ingredients required on the box)

1 box white cake mix (plus ingredients required on the box)

For the Frosting:

2 cups heavy whipping cream

1 cup powdered sugar

1 tsp vanilla extract

8 oz cream cheese, softened

For the Strawberry Crunch Topping:

1 cup freeze-dried strawberries

20 golden Oreo cookies

4 tbsp unsalted butter, melted


Instructions

1 Bake the Cakes

Preheat your oven to 350°F (175°C) Grease and flour three 8-inch round cake pans

Prepare the strawberry and white cake mixes according to package instructions

Pour the batter into the prepared pans (two pans with strawberry and one with white cake batter)

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean

Let cakes cool completely before assembling

2 Prepare the Frosting

In a large bowl, beat the cream cheese until smooth

Add powdered sugar and vanilla extract, mixing well

Gradually add heavy whipping cream, beating until stiff peaks form Set aside

3 Make the Strawberry Crunch Topping

In a food processor, blend freeze-dried strawberries and golden Oreos until a crumbly mixture forms

Mix in the melted butter until combined

4 Assemble the Cake

Place one strawberry cake layer on a serving plate and spread a layer of frosting

Add the white cake layer, more frosting, then the second strawberry layer

Frost the entire cake with the remaining frosting

5 Add the Crunch Topping

Gently press the strawberry crunch mixture onto the sides and top of the cake

6 Serve

Chill the cake for at least 30 minutes before slicing and serving

Notes

For extra strawberry flavor, add fresh strawberry slices between layers

Store the cake in the refrigerator for up to 3 days
