These Strawberry Cheesecake Bars are a creamy, fruity dessert layered over a buttery graham cracker crust. With a swirl of strawberry preserves and a rich cheesecake filling, they’re perfect for spring and summer gatherings or a sweet treat anytime.
Ingredients
For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tbsp unsalted butter, melted
For the Cheesecake Filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup sour cream
For the Strawberry Swirl:

1/3 cup strawberry preserves or jam

Instructions
1 Make the Crust
Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper
In a bowl, mix graham cracker crumbs, sugar, and melted butter
Press mixture firmly into the bottom of the pan
Bake for 8–10 minutes, then let cool slightly
2 Prepare the Cheesecake Filling
In a large bowl, beat cream cheese and sugar until smooth and creamy
Add eggs one at a time, mixing well after each
Stir in vanilla extract and sour cream until fully combined
3 Assemble the Bars
Pour the cheesecake mixture over the cooled crust
Drop spoonfuls of strawberry preserves on top and use a toothpick or knife to gently swirl them into the batter
4 Bake and Chill
Bake for 35–40 minutes, or until the center is just set
Cool to room temperature, then refrigerate for at least 3 hours or overnight
5 Serve
Cut into bars and top with fresh strawberries or whipped cream if desired
Notes
For easier slicing, chill bars thoroughly and use a hot, clean knife
You can substitute strawberry jam with raspberry or blueberry if preferred
Bars can be made ahead and stored in the refrigerator for up to 5 days
