Ingredients

Scale

For the Brownies:

1 box brownie mix (plus ingredients listed on the box: eggs, oil, water)

1/2 tsp peppermint extract (optional, for a minty twist)

For the Green Whipped Layer:

2 cups heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

Green food coloring

For the Layers & Garnish:

1 cup crushed mint chocolate cookies (e.g., Oreos or Thin Mints)

1/2 cup chocolate chips or chopped Andes mints

Whipped cream (for topping)

Green sprinkles

Instructions

1 Prepare the Brownies
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
Prepare the brownie batter according to package instructions, adding peppermint extract if using
Bake as directed, then let cool completely
Cut into bite-sized cubes

2 Make the Green Whipped Layer
In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form
Add a few drops of green food coloring, mixing until fully incorporated

3 Assemble the Trifle
Begin by selecting a large trifle dish or individual serving cups for assembly
Start with a layer of brownie cubes, ensuring they are evenly spread at the bottom
Next, add a generous layer of green whipped cream, spreading it smoothly over the brownies
Sprinkle crushed mint cookies and chocolate chips on top, distributing them evenly
Repeat the layering process until all ingredients are used, finishing with a final layer of whipped cream on top

4 Garnish and Serve
Sprinkle with extra crushed cookies, chopped Andes mints, and green sprinkles for a festive touch
Serve immediately or refrigerate for up to 4 hours before serving

Notes

For an extra minty flavor, add 1/2 teaspoon of peppermint extract to the whipped cream

Use vanilla pudding instead of whipped cream for a creamier texture

Store leftovers covered in the refrigerator for up to 3 days
