Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
2 tbsp olive oil
2 tbsp unsalted butter
For the Gravy:
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
1 cup chicken broth
1 cup heavy cream or whole milk
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp smoked paprika
For Garnish:
Fresh parsley, chopped
Instructions
1 Season and Cook the Chicken
Pat the chicken breasts dry with a paper towel and season both sides with salt, black pepper, garlic powder, onion powder, and paprika
Heat olive oil and butter in a large skillet over medium heat
Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through
Remove from the skillet and set aside
2 Prepare the Gravy
In the same skillet, add chopped onions and cook until soft, about 3 minutes
Stir in minced garlic and cook for another 30 seconds
Sprinkle in flour and stir continuously for 1 minute to form a roux
Gradually whisk in chicken broth and heavy cream, making sure there are no lumps
Season with salt, black pepper, thyme, and smoked paprika
Let the gravy simmer for 3-5 minutes, stirring occasionally, until it thickens
3 Smother the Chicken
Return the cooked chicken breasts to the skillet, nestling them into the gravy
Spoon some gravy over the chicken and let it simmer for another 3-5 minutes so the flavors meld together
4 Serve
Garnish with fresh parsley and serve hot over mashed potatoes, rice, or roasted vegetables

For extra richness, add 1/4 cup grated Parmesan cheese to the gravy
Substitute heavy cream with half-and-half or whole milk for a lighter option
