Description

These Rhubarb Bars feature a buttery shortbread crust topped with a tangy-sweet rhubarb filling, making them a perfect spring and summer dessert. With a soft texture and bright flavor, they’re great for potlucks, picnics, or an afternoon treat.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar

For the Filling:

  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 2 cups chopped fresh rhubarb

Optional Topping:

  • Powdered sugar for dusting

Instructions

1 Make the Crust
Preheat oven to 350°F (175°C)
In a bowl, mix flour, butter, and powdered sugar until combined and crumbly
Press the mixture into the bottom of a greased 8×8-inch baking dish
Bake for 12–15 minutes or until lightly golden

2 Prepare the Filling
In a mixing bowl, whisk together sugar, flour, baking powder, salt, and eggs
Fold in chopped rhubarb until evenly coated

3 Assemble and Bake
Pour the rhubarb mixture over the pre-baked crust and spread evenly
Bake for 30–35 minutes or until the top is set and lightly browned
Let cool completely in the pan

4 Serve
Cut into squares and dust with powdered sugar if desired
Serve chilled or at room temperature

Notes

Can be made a day in advance and stored in the refrigerator

Add a pinch of cinnamon or nutmeg for extra warmth

Substitute part of the rhubarb with strawberries for a sweeter variation
