Ingredients

1 cup mashed ripe bananas (about 2 medium bananas)

1 1/2 cups all-purpose flour

Optional Add-ins:

Instructions
1 Mix the Wet Ingredients
Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan
In a large bowl, whisk together mashed bananas, pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla extract
2 Add the Dry Ingredients
In a separate bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt
Add the dry ingredients to the wet ingredients and stir until just combined
Fold in any optional add-ins if using
3 Bake the Bread
Pour the batter into the prepared loaf pan and smooth the top
Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
4 Serve
Slice and enjoy warm or at room temperature, plain or with a smear of butter

Store leftovers wrapped tightly at room temperature for up to 3 days, or refrigerate for up to a week
This bread freezes well for up to 3 months
For extra moisture, use very ripe bananas
