Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Lemon Filling:
3/4 cup fresh lemon juice (about 4–5 lemons)
1 tbsp lemon zest
1 can (14 oz) sweetened condensed milk
4 large egg yolks
1/2 tsp vanilla extract
For Garnish (Optional):
Whipped cream
Lemon slices
Fresh mint leaves
Instructions
1 Prepare the Crust Preheat oven to 350°F (175°C) In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined Press the mixture evenly into a 9-inch tart pan Bake for 8-10 minutes, then let cool slightly
2 Make the Lemon Filling In a mixing bowl, whisk together lemon juice, lemon zest, sweetened condensed milk, egg yolks, and vanilla extract until smooth Pour the filling into the cooled crust and spread evenly
3 Bake the Tart Bake for 15-18 minutes, or until the filling is set but slightly jiggly in the center Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving
4 Serve Garnish with whipped cream, lemon slices, and mint leaves if desired Slice and enjoy chilled
Notes
For a more intense lemon flavor, increase the zest to 1 1/2 tbsp
Store leftovers in the refrigerator for up to 3 days
Use a shortbread crust for a richer, buttery base
