  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp honey (optional, for extra sweetness)

  • Peach slices
  • Drizzle of honey
  • Mint leaves

Instructions

1 Prepare the Cupcakes
Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners
In a bowl, whisk together flour, baking powder, and salt
In a separate bowl, cream butter, sugar, and honey until light and fluffy
Add eggs one at a time, then mix in vanilla extract

2 Combine and Fold
Add flour mixture and milk to the wet ingredients in alternating additions
Fold in the diced peaches

3 Bake and Cool
Divide batter evenly among muffin cups
Bake for 18–22 minutes, or until a toothpick comes out clean
Cool in pan for 5 minutes, then transfer to a wire rack to cool completely

4 Make the Frosting
Beat cream cheese and butter until smooth
Add powdered sugar, vanilla, and honey (if using), and beat until fluffy

5 Frost and Serve
Pipe or spread frosting onto cooled cupcakes
Top with a peach slice, mint, or a drizzle of honey if desired

Notes

For more peach flavor, stir a tablespoon of peach preserves into the frosting
