Description
This Grilled Chicken Parmigiana is a lighter twist on the Italian-American classic. Juicy grilled chicken breasts are topped with savory marinara, melty mozzarella, and a sprinkle of Parmesan for a satisfying meal without the breading and frying.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper to taste
1 1/2 cups marinara sauce (store-bought or homemade)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Optional for Serving:
Cooked spaghetti or zucchini noodles
Garlic bread

Instructions
1 Prep and Season the Chicken
Pound chicken breasts to even thickness if needed
Rub with olive oil and season with Italian seasoning, garlic powder, salt, and pepper
2 Grill the Chicken
Preheat grill or grill pan to medium-high heat
Grill chicken for 5–6 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C)
3 Add Sauce and Cheese
Lower the grill heat or move chicken to indirect heat
Spoon marinara sauce over each grilled chicken breast
Top with mozzarella and Parmesan cheese
Cover the grill or loosely tent with foil and cook until cheese is melted, about 2–3 minutes
4 Garnish and Serve
Remove from grill and garnish with fresh basil or parsley
Serve over pasta or with your favorite sides
Notes
For extra flavor, marinate the chicken in olive oil, garlic, and Italian herbs for 1 hour before grilling
Use sliced fresh mozzarella for a more traditional presentation
Leftovers make great sandwiches or wraps the next day
