Description

This Cotton Candy Poke Cake is a fun and colorful dessert that brings the nostalgic flavors of cotton candy into a moist and fluffy cake. Filled with a sweet, vibrant gelatin mixture and topped with a light whipped frosting, this cake is perfect for birthdays, parties, or any festive occasion!


Ingredients

1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)

1 box (3 oz) blue raspberry gelatin mix

1 box (3 oz) pink strawberry gelatin mix

2 cups boiling water, divided

1 cup cold water, divided

1 container (8 oz) whipped topping (Cool Whip)

1/2 cup cotton candy-flavored syrup (optional)

Cotton candy pieces, for garnish

Sprinkles, for garnish


Instructions

1 Prepare the Cake Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish Prepare the cake batter according to the package instructions and bake in the prepared dish Allow the cake to cool completely before proceeding

2 Poke and Fill the Cake Using the handle of a wooden spoon, poke holes evenly across the cooled cake In separate bowls, mix the blue raspberry gelatin with 1 cup of boiling water and stir until dissolved, then add 1/2 cup cold water Repeat with the pink strawberry gelatin in a second bowl Pour the blue gelatin into half of the poked holes and the pink gelatin into the other half, allowing the colors to alternate Refrigerate for at least 1 hour to set

3 Frost and Garnish Spread the whipped topping evenly over the cake Drizzle cotton candy-flavored syrup over the frosting if using Garnish with cotton candy pieces and sprinkles just before serving

4 Serve Slice and enjoy this colorful, sweet treat Keep refrigerated until ready to serve

 

Notes

Add a few drops of cotton candy extract to the cake batter for extra flavor

Decorate just before serving to prevent cotton candy from dissolving

Store leftovers in the refrigerator for up to 3 days
