2 Prepare the Cheesecake Filling: In a blender or food processor, blend cottage cheese until completely smooth In a large mixing bowl, whisk together blended cottage cheese, Greek yogurt, sugar, eggs, vanilla extract, cornstarch, lemon juice, and salt until fully combined
3 Bake the Cheesecake: Pour the filling over the prepared crust and smooth the top Bake for 50-60 minutes, or until the center is set but slightly jiggly Turn off the oven, crack the door slightly, and let the cheesecake cool inside for 1 hour Refrigerate for at least 4 hours before serving
