1 cup cottage cheese (smooth or blended)

1/2 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs1 tsp vanilla extract

1/2 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.

  2. In a blender or food processor, blend cottage cheese until smooth.

  3. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix until smooth.

  4. Add eggs and vanilla extract, mixing well.

  5. Fold in the blended cottage cheese until well incorporated.

  6. Sift in flour, cocoa powder, baking powder, and salt. Gently mix until just combined.

  7. Fold in chocolate chips if using.

  8. Pour the batter into the prepared baking dish and spread evenly.

  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  10. Allow brownies to cool completely before slicing and serving.

 

Notes

For extra fudginess, slightly underbake the brownies.
