Description

This Cinnamon Roll Cheesecake is the ultimate dessert fusion, combining the creamy richness of classic cheesecake with the sweet, spiced swirl of a cinnamon roll. For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

For the Cinnamon Swirl:

  • 1/2 cup brown sugar

  • 1 1/2 tsp ground cinnamon

  • 3 tbsp all-purpose flour

  • 4 tbsp unsalted butter, melted

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 12 tbsp milk (as needed for consistency)


Instructions

1 Prepare the Crust
Preheat oven to 325°F (160°C)
Mix graham cracker crumbs, sugar, and melted butter in a bowl
Press mixture into the bottom of a 9-inch springform pan
Bake for 8–10 minutes, then let cool

2 Make the Cheesecake Batter
In a large bowl, beat cream cheese and sugar until smooth
Add eggs one at a time, mixing well after each
Mix in sour cream and vanilla until combined

3 Add the Cinnamon Swirl
In a small bowl, mix brown sugar, cinnamon, flour, and melted butter
Pour half of the cheesecake batter over the crust
Drizzle half of the cinnamon swirl over the batter and gently swirl with a knife
Repeat with remaining cheesecake batter and swirl mixture

4 Bake the Cheesecake
Wrap the springform pan with foil and place it in a larger pan filled with hot water (water bath)
Bake for 55–65 minutes or until center is just set
Turn off oven and let cheesecake cool in the oven with the door slightly open for 1 hour
Chill in the refrigerator for at least 4 hours or overnight

5 Add the Glaze and Serve
Mix cream cheese, powdered sugar, vanilla, and milk until smooth
Drizzle over the chilled cheesecake before slicing and serving

Notes

Let ingredients come to room temperature for the smoothest texture

Use a knife dipped in hot water for clean slices
