Ingredients
For the Filling:
2 tbsp olive oil
1 lb ground chicken
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced
1/2 cup frozen peas
1/2 cup frozen corn
1 tbsp tomato paste
1 tsp Worcestershire sauce
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 cup chicken broth
1 tbsp all-purpose flour
Salt and pepper to taste
For the Mashed Potato Topping:
2 lbs potatoes, peeled and cubed
1/2 cup milk
4 tbsp unsalted butter
1/2 cup shredded cheddar cheese (optional)

Instructions
1 Prepare the Mashed Potatoes: Boil the potatoes in a large pot of salted water until fork-tender, about 15 minutes Drain and mash with milk, butter, and shredded cheese if using, then season with salt and pepper to taste Set aside
2 Cook the Filling: Heat olive oil in a large skillet over medium heat Add diced onion and carrots, cooking until softened Stir in garlic and ground chicken, cooking until the chicken is browned Add tomato paste, Worcestershire sauce, thyme, and rosemary, mixing well Sprinkle in the flour, stirring to coat everything evenly Pour in the chicken broth and simmer until thickened, about 5 minutes Stir in peas and corn, then season with salt and pepper to taste
3 Assemble and Bake: Preheat oven to 375°F (190°C) Transfer the chicken filling to a greased baking dish, spreading it evenly Spoon the mashed potatoes over the top, smoothing it with a spatula Bake for 20-25 minutes or until the top is golden brown Let cool slightly before serving
Notes
For a richer flavor, mix Parmesan cheese into the mashed potatoes
Leftovers can be stored in the refrigerator for up to 3 days
