Description

This Chicken Parm Sandwich is a crispy, cheesy, and saucy handheld version of the classic Italian-American favorite. Perfectly breaded chicken cutlets are smothered in marinara sauce and melted mozzarella, then tucked into a toasted sandwich roll for the ultimate comfort food experience.

For the Chicken:

  • 2 large boneless, skinless chicken breasts (sliced in half horizontally to make 4 cutlets)

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 1/2 cups Italian-style breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • Vegetable oil for frying

For Assembly:

  • 4 sandwich rolls or hoagie buns

  • 1 1/2 cups marinara sauce

  • 1 1/2 cups shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese (optional)

  • Fresh basil leaves (optional)


Instructions

1 Bread and Fry the Chicken
Set up a breading station with three shallow dishes: flour, beaten eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper
Dredge each chicken cutlet in flour, then dip in egg, and coat with breadcrumb mixture
Heat oil in a large skillet over medium heat
Fry chicken cutlets until golden brown and cooked through, about 3-4 minutes per side
Transfer to a paper towel-lined plate to drain excess oil

2 Toast the Rolls
Preheat oven to 375°F (190°C)
Slice rolls and place cut side up on a baking sheet
Toast for 5-6 minutes until lightly crispy

3 Assemble the Sandwiches
Place a chicken cutlet on each toasted roll
Spoon marinara sauce over the chicken, then sprinkle with mozzarella and Parmesan cheese
Place sandwiches back in the oven for 5-7 minutes, or until cheese is melted and bubbly

4 Serve
Garnish with fresh basil leaves if desired
Serve hot with a side of chips, salad, or fries

Notes

Use store-bought or homemade marinara sauce depending on preference

Substitute mozzarella with provolone or a blend of Italian cheeses for variety

To make ahead, fry the chicken and store in the fridge until ready to assemble and bake
