Ingredients
For the Chicken Crust:
1 lb ground chicken
1/2 cup grated Parmesan cheese
1 large egg
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
For the Toppings:
2 cups chopped romaine lettuce
1/2 cup Caesar dressing
1/4 cup shredded Parmesan cheese
1/2 cup cherry tomatoes, halved
1/4 cup croutons (optional)
Freshly cracked black pepper (optional)
Instructions
- Prepare the Chicken Crust:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mix ground chicken, grated Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper until well combined.
Transfer the chicken mixture to the baking sheet and flatten into a round crust about 1/2 inch thick.
Bake for 15-20 minutes, or until the crust is firm and slightly golden.
- Assemble the Toppings:
While the crust cools slightly, toss chopped romaine lettuce with Caesar dressing in a bowl until evenly coated.
Spread the dressed lettuce over the chicken crust.
Top with shredded Parmesan, cherry tomatoes, and croutons if using.
Sprinkle with freshly cracked black pepper for an extra kick.
- Serve:
Slice and serve immediately. Enjoy as a fresh and flavorful low-carb pizza alternative!
Notes
For a crispier crust, broil for 2-3 minutes before adding salad toppings.
You can add grilled chicken slices on top for extra protein.
Use low-fat Caesar dressing for a lighter option.
